Chocolate Bites
These days it’s got to be quick quick quick!
Looking after bub full-time gives me the perfect excuse to indulge, but I refuse to resort to junk!
Here is my latest little chocolate fix, ready in minutes.
Ingredients
1 cup raw almonds
7 Medjool dates
3 tbsp raw cacao powder
6 tbsp melted coconut paste*
Pinch sea salt
* Coconut paste is made from whole coconut flesh that is ground into a creamy paste. Loving Earth do a beautiful one in a glass jar. Place jar in a pot of boiling water and allow to melt enough to easily stir through with a spoon.
Method
Place almonds and dates in food processor and process until almonds are a rough meal. You may have to scrape the edges every now and then to ensure the almonds and dates are well combined.
Add the remaining ingredients and process to combine.
Transfer the mix into a silicon loaf mould and press down with your fingers. A silicon mould works really well, but you could also use a baking dish. I like to go over it with the bottom of a measuring cup and a spatula to smooth it out.
Refrigerate for 3 hrs or so until firm.
Remove the whole slab onto a chopping board and chop it up into bites.
If you used a baking dish, simply slice in the dish.
Store bites in an air-tight glass jar in the fridge for up to 2 weeks ( I hear you laugh). You could also freeze them.
